SHREDDED BONELESS MUTTON RECIPE  / PULLED LAMB /

Shredded Mutton With Caramelized Onions is a delicious recipe which gets its flavour from slow cooked mutton pieces and combined with a sweet caramelised onions. 

INGREDIENTS

  • Boneless mutton – 500 gms [ small pieces ]
  • Oil – 2 OR 3 tbsp
  • Ginger garlic paste – 1 tbsp + 2 tsp
  • Onion thinly sliced – 4 big
  • Green chilli – 1
  • Coriander pwdr – 2 tsp + 1 tsp
  • Jeera pwdr – 1 tsp
  • Red chilli pwdr – ½ or 1 tsp
  • Turmeric pwdr – ¼ + ¼ tsp
  • Garam masala pwdr – 1 tsp
  • Freshly ground black pepper – 1 tbsp or as per taste .
  • Jeera pwdr – 1 tsp
  • Fennel seeds [ saunf ]  pwdr – 1 tsp
  • Salt

PREPARATION

  1. Wash and transfer the mutton to a bowl.
  2. Add ¼ tsp turmeric + ½ or 1  tsp chilli pwdr + 1 tsp coriander pwdr + 2 tsp ginger garlic paste + little salt  .
  3. Give a nice mix and keep aside for sometimes in fridge for marination .
  4. Now transfer the mutton to a cooker , add ¼ or ½ cup water.
  5. Bring to first whistle on medium flame .
  6. Now lower the flame to lowest and cook for 20 to 25 mins.
  7. Once done allow the pressure to release on own .
  8. Open if any excess water , cook on high flame and evaporate else drain out any excess water and use in any gravy .
  9. Take the mutton pieces and shredded . It should resemble thin threads.

METHOD

Heat oil in a pan and add in the onions.

Cook till the onions are completely caramelized it may take time but this what brings the real taste of the dish.

Add ginger garlic paste and fry till raw smell leaves.

 Add garam masala + coriander pwdr + turmeric pwdr + jeera pwdr  and mix well .

Add in the pulsed mutton threads now and mix well .

 Stir fry for few mins till dry .

Add pepper pwdr and mix well .

 Stir fry for few mins till completely dry or with very little moisture as per your taste .

Switch off the flame.

Garnish with lemon wedges and coriander leaves.

Serve .
