SINDHI STYLE DRUMSTICK FLOWERS MALAI SABJI

HOW TO USE THESE FLOWERS –
These flowers are very delicate, and when one goes to buy these from the market, you will get very few bloomed flowers, most of them are buds. Along with these you shall find broken thin stems. These stems have to be discarded. Soak for sometime , wash and squeeze off the excess water . Flowers are ready to use .
INGREDIENTS
- 250 gms drumstick flowers
- 1 tbsp oil
- 1 tsp Jeera
- 1 onion, finely chopped
- 1 tbsp ginger garlic green chilli paste
- Tomato puree made from 2 big tomatoes
- ½ tsp red chilly pwdr
- ¼ tsp turmeric pwdr
- 1 tsp coriander pwdr
- ¼ cup cream homemade malai or fresh cream
- Salt to taste
- ¼ cup chopped fresh garlic chopped
PREPARATION
Clean the flower , discard the stems.
Wash it well .
Pressure cook upto 2 whistles . Don’t over cook , it has to be soft and whole in shape .
Once done drain the water.
Drain the water through a colander .
Press and squeeze out all the excess water.
METHOD
Heat oil.
Add ginger garlic green chilli paste and stir fry for few seconds .
Add onion and sauté, till transparent.
Add tomato puree and stir fry till oil separates .
Add spices and mix well .
Add the malai / fresh cream and mix well.
Add the fresh garlic and mix .
Add the cooked flowers, and mix well.
Stir and cook for 2 mins .
There should be no moisture in the dish, at the same time, it should be soft.
Off the flame.
Serve with rotis/ phulkas / parathas or even rice .
It goes well with fulko or dodho (bhakris) or khichni .
