ALOO MATAR PARATHA

INGREDIENTS

  • Wheat flour – 3 cup
  • Oil to knead the dough – 3 tsp
  • Green peas – 2 cup
  • Mashed aloo – 1 cup
  • Green chilli + ginger + garlic paste  – 1 tbsp
  • Garam masala – ½ tsp
  • Red chilli pwdr – ½  tsp or as per taste
  • Chaat masala – ½  tsp
  • Amchur pwdr – a generous pinch
  • Kasoori methi – 1 or 2 tbsp [ optional ]
  • Salt to taste
  • Finely chopped coriander leaves – 3 or 4 tbsp
  • Oil or ghee to fry the paratha

PREPARATION

Mix wheat flour + salt + oil + water and knead it into a soft dough .Cover and keep aside for some time. Divide the dough into equal portions and roll it into smooth balls. Boil the green peas for 10 minutes ,drain the water and let it cool.There should be no moisture . Blend it in a mixer to a coarse mixture . Heat a 2 tsp oil in a pan ,add the ginger garlic green chilli paste and fry till raw smell leaves. Add the green peas mixture and stir fry for 2 minutes. [it will stick to the bottom so keep stirring ] Allow it to cool. Add all other ingredients and mix well . Check the taste and adjust the ingredients. Divide this mixture into equal portions and roll them into balls .

METHOD

Roll the balls into small circle and place green peas ball in the centre.

Bring the edges of the dough together in the centre and pinch it.

Flatten this ball and roll into thick parathas by dusting dry flour.

Heat the tava or non stick pan.

Place the paratha on it .

Fry on both sides by drizzling little ghee or oil.

While frying ,press it around the edges with a spatula.

Once done remove it.

Serve hot with home made butter , curd, pickle, onion or sweet chutney and green chutney.

VARIATION –Instead of stuffing we can knead the flour  + green peas mixture together and make parathas .

NOTES

  1. The mixture should not be wet .
  2. While rolling the parathas , roll it gently by dusting flour, so that it does not break.
  3. The dough should be soft so that it is easy to roll.
  4. Y not add Ajwain to the dough ,it  adds little flavour.
  5. I like to add raw onion also to the stuffing , if adding so then be quick as onion sweats.
