SOUTHINDIAN STYLE Aloo palak ki sabji recipe

                                      ALOO PALAK KI SABJI / SPINACH COOKED WITH POTATO

INGREDIENT

  • Palak / spinach – 1 bunch
  • potato – 2 medium
  • onion finely chopped – 1
  • green chillies – 2 or 3 or as per taste
  • turmeric pwdr – ¼ tsp [ optional ]
  • oil – 1 tbsp
  • mustard seed – ½ tsp [optional ]
  • cumin seed – 1/2 tsp
  • asafoetida – a pinch [ optional ]
  • freshly grated coconut – 2 or 3 tbsp for garnish [ optional ]

PREPARATION.

  1. Clean the palak ,soak in water to remove soil or any other impurities. Rinse in 2 -3 waters. Remove excess water by draining and keeping in a colander . Finely chop it.
  2. Peel and dice the potato.

METHOD.

Heat oil in a pan add mustard seeds + cumin seeds + asafoetida ,allow it to crackle.

Add onion + green chilly and saute till translucent.

Add the potato + turmeric pwdr and mix .

Cover and cook for 3 – 4  minute.

Add the chopped palak and mix well .

Again cover and cook. The palak will sweat. [ leave water]

Adjust salt and cook for 5 – 8  minutes or  till the potatoes become soft and water dries up completely.

Stir occasionally while cooking to avoid sticking at the bottom.

Garnish with freshly grated coconut.

Serve hot as side dish .

NOTES

  1. You can also add garlic.
  2. You can add coriander pwdr – 1 tsp.
  3. For Punjabi type you can add ginger + garlic + tomato + chilli pwdr + coriander pwdr.
