Cheese corn spinach sandwich recipe
CHEESE CORN SPINACH SANDWICH RECIPE
INGREDIENTS
- Boiled corn – 1 cup
- Spinach /palak – 2 cup finely chopped
- Garlic – 2 finely chopped
- Butter + olive oil – 1 tbsp
- Maida – 2 tbsp
- Milk – 1 cup
- Mixed herb or oregano – 1tsp
- Pepper pwdr + salt – as required
- Chilli flakes – ½ tsp optional
- Grated cheese – 2 to 3 tbsp
- Bread slices
PREPARATION
- Clean wash drain and finely chop the spinach leaves.
- Coarsely blend or chop the corn.
- In pan heat 1 tsp of oil and fry the spinach till it reduces and complete water evaporates now add in the corn .Mix well and off the flame.

METHOD
Heat butter + oil in a pan add the garlic and saute.
Low the flame and add the flour and saute till lightly coloured.
Add the milk and stir continuously to avoid lumps to form.
Once it thickens lightly add the spinach + corn + salt + pepper + oregano + chilli flakes and mix well .
Finally add the grated cheese , mix well and off the flame.
The sauce should be creamy and thick.
It thickens more as it cools.
Apply the mixture on one side of the bread and cover with another slice.
Butter the bread on the outside and toast it on both the sides till crispy and golden colour on a hot tawa or any toaster. [3-4 minutes on each side on medium flame]
Cut and serve it hot with any chutney or sauce or dips.
VARIATION
Saute garlic – add the spinach and fry till it reduces – then add the corn – to this add the flour – mix well – add milk when it thickens season it with salt + pepper + mixed herbs + chilli flakes + grated cheese.
NOTES
- You can also add onion.
- With cheese you can add fresh cream.
- Instead of maida you can use wheat flour or corn flour.
- You can try the same stuffing in chappatis and dosas.
- While toasting press it lightly.
- You can add more milk and make it thin and just have it like that ,it tastes yum.
- You can use brown bread or white bread.
- Be careful while adding salt as butter and cheese already contains .
- This is the same white sauce used for pasta and spagetti.
