Eggless caramel CUSTARD pudding recipe
EGGLESS CARAMEL CUSTARD PUDDING RECIPE
INGREDIENTS FOR THE CARAMEL
- sugar – ¼ cup
- water – 2 tbsp
METHOD
Heat the sugar + water in a thick sauce pan ,allow it to melt.
Once the sugar melts ,cook till it turns very light [not dark ]golden brown. [don’t stir just keep swirling the pan ]
Once done immediately pour it in the moulds and swirl it so that it coats on all sides.
INGREDIENTS FOR THE CUSTARD
- milk – 500 ml
- vanilla custard powder – 2 tbsp
- Vanilla essence – ½ tsp
- china grass – 5 grams [around 3 tbsp]
- sugar – 3 or 4 tbsp [adjust as per your taste]
PREPARATION
Cut or blend the agar agar into fine bits
Soak it in 1 cup of hot water for 10 to 15 minutes .
Boil it on low flame till it dissolves completely.
METHOD
In ¼ th cup of milk mix the vanilla custard pwdr and keep aside.
Boil rest of the milk with sugar on medium heat.
When it starts boiling add the custard pwdr mixture + vanilla essence and the china grass mixture.
Keep on stirring till the whole mixture mixes well .[keep stirring or it will stick and burn at the bottom.
Off the flame when it thickens.
Pour this into the moulds that has been coated with the sugar caramel.
Cool it and then refrigerate it for minimum 2-3 hrs or overnight.
Demould it and serve it chilled.
NOTES
- Each process has to be done at very low flame.
- By chopping or blending the china grass , it dissolves fast.
- You need not grease the mould it has to be dry.
- Don’t allow the caramel to darken ,it has to be light brown or it will taste bitter.
- Don’t pour hot syrup in glass mould,it will crack.
- Instead of pouring the caramel at the bottom you can even pour it at the top while serving.
- You can even strain the pudding before pouring it in the mould.
- To give variations instead of custard pwdr use cornflour + any essence + colour.
- Instead of caramel syrup you can use caramel sauce or chocolate sauce.
- For demoulding don’t use a knife ,just press lightly around the edges of the pudding and invert it on a plate upside down.
- Once again be careful while making the caramel as it darkens and solidifies very fast.for me I got it correct in the third attempt.
WHAT IS CHINA GRASS / AGAR AGAR ? [this information about china grass is from net]
CHINA GRASS / AGAR AGAR is a vegetable substitute for gelatin.it is a sea weed and completely vegetarian.it comes in the form of flakes or powder.It gives a smooth and glossy finish.
TIPS FOR USING IT – Break it into small pieces or powder it ,soak it for 15 minutes ,boil it till it dissolves completely on low flame ,keep stirring while boiling or it settles down.Do not over cook,off the flame as soon as it dissolves completely.This mixture has to be added to another hot mixture immediately.Both the mixtures have to be hot to set nicely.If any of the mixture is cold then it will not set properly.If it solidifies again you can reheat it on low flame till it melts .
I bought this pkt of 10 gm. For 500ml milk we have to use 5 gms that is half of this pkt.
