QUINOA MOONG DAL KHICHDI

INGREDIENTS

  • Quinoa – ½   cup
  • Yellow moong dal – ½  cup
  • Ghee / oil – 1 or 2 tbsp
  • Jeera – 1 tsp
  • Finely chopped onion – 1 small
  • Finely chopped tomato – 1 small
  • Green chilli – 1 or 2 or as per taste
  • Grated ginger – 1 tsp
  • Asafoetida – a pinch
  • Cinnamon – 1 small piece
  • Bayleaf – 1
  • Clove – 2
  • Red chilli pwdr – ½ tsp
  • Coriander pwdr – 1 tsp [ optional ]
  • Turmeric – ¼ tsp
  • Water –  3 ½ cup or as per the consistency you want
  • Finely chopped coriander leaves to garnish
  • Mix veges – 1 cup [ carrot / green peas / beans etc ] optional
  • Salt to taste

PREPARATION

Wash the quinoa + dal together and keep aside.

METHOD

Heat oil / ghee in a cooker , crackle the jeera .

Add cinnamon + bay leaf + clove and give a mix.

Immediately add the onion + ginger + chilli  and stir fry till translucent .

Add tomato + salt and stir fry till soft .

If adding veges add now and stir fry for a min .

Add chilli pwdr + turmeric + coriander pwdr and stir fry.

Drain and add the quinoa + dal and mix well .

Stir and cook for a min.

Add water and mix.

 Taste and adjust salt.

Cover and pressure cook upto 3 whistles on medium flame.

Once the pressure releases , open and give a nice mix. The texture should be mushy and thick runny. As it cools, it thickens even more.

Garnish with coriander leaves .

Serve hot with any side accompaniments .
