We have different types of matta rice like polished /unpolished / single boiled /double boiled /raw matta / with bran /without bran etc.
BENEFITS OF MATTA RICE – Kerala Matta rice is a source of many nutrients including carbohydrates, Vitamin A, B, Magnesium and Calcium. The adequate availability of such minerals and vitamins helps in maintaining a healthy body and lively organs. Calcium is an important factor for keeping bones and teeth strong.
This rice is highly nutritious and rich in fibre. Its high fiber content will leave you feeling fuller even when you eat less. This means that you’re eating just the right amount of your daily calorie intake.
Red rice miraculously controls the insulin levels within the body and is extremely beneficial for someone who is diabetic and would still like to enjoy the goodness of rice.
Cooking time depends on the quality of matta rice you use.
Matta rice can be cooked in open pot or cooker or thermal cooker. Nowadays we mostly use thermal cooker. The rice is cooked in lots of water.
In this recipe I will show how to cook in open pot as well as regular cooker .
After cooking the rice we get excess water which needs to be drained known as rice water . Rice water, also known as kanji, munji or maand, helps in the digestion process and soothes issues like diarrhoea and food poisoning. Rice water contains minerals and probiotics which are essential for gut health. Though light to stomach it is loaded with energy boosting elements to give you all the strength for the toil of the day. You can use this water in making chapati dough,gravies , soups etc
Here I have used double boiled matta rice which takes more time to cook .Single boiled matta rice takes less time .
INGREDIENTS [ Cooking time depends on the quality of matta rice you use.]
- 1 cup matta rice
- Salt to taste
- 11 cup water for open pot cooking
- 5 ½ cup for cooker cooking
PREPARATION
Wash and rinse the rice well in 2 or 3 water .Soak it enough water for minimum 30 mins to 1 hr .The washed water can be used for plants .
Soaking is important for this rice, else it will not get cooked properly.
OPEN POT COOKING METHOD
Take a big vessel with 11 cup water .
Once it starts boiling add the soaked rice + salt and give a nice mix.
Allow it to boil and cook on medium to low flame for 5 mins .
Now off the flame and over it.Keep it undisturbed for 20 to 30 mins .
Open and give a nice mix .
Again cook on medium flame till is done . { cooking time depends on quality of rice ]
Press and check the rice after 5 mins .
After the rice is cooked, if you press the rice should be mash able not too mushy ,you can even chew and check if the rice is cooked .
If the rice is not cooked , cook it further.
As I said cooking time depends on the quality of rice you have used.
I have used double boiled rice so it took me more time.
It may take anywhere between 40 mins to 1 hr .
Now drain the excess water .
Use a a lid and clip it as shown in the video and place it a slant position so that the excess water drains away. Let it in this position for at least 10 mins or more .
Open and fluff it up.Rice is ready to serve .
This rice tastes great with dal curry, pulissery, sambar, fish curry, chicken curry or nay non veg curry etc
COOKER METHOD
Take soaked rice + 5 ½ cup water + little salt directly in the pressure cooker.
Close and pressure cook for 10 whistles on medium flame .
Lower the flame and further cook for 10 mins ( do not worry about the whistles ).
Switch off and do not open or disturb it for 10mins.
Allow the pressure to release by itself, the resting time is important.
Check the rice if it is cooked .
Transfer the cooked rice to a colander to drain the excess water .
Open and fluff it up.
Kerala Matta Rice is ready to be served ..
NOTE – Do not cook on high flame while pressure cooking, the starch will ooze out . You can also cook it in vessel placed inside the cooker.
