Horse gram chutney recipe
HORSE GRAM / KULITH CHUTNEY /KOLLU CHUTNEY RECIPE FOR RICE

INGREDIENTS
- Well roasted Kulith dal / horse gram dal – 1/4 cup
- Freshly grated coconut – 2 tbsp
- Red chillies – 3 or 4 or as per taste
- Tamarind – 1 inch piece
- Garlic – 2 cloves
- Ginger – tiny piece
- Curry leaves – 1 sprig
- Asafoetida a pinch
- Water to grind – as per consistency you want
- Salt as per taste
PREPARATION
Clean the dal by picking .
Heat a pan with a tsp of oil, roast the red chillies. Remove and keep aside .
Now add the dal in th same pan .and roast it on medium flame for 7 to 8 minutes by continuously stirring till the colour changes and the covering becomes hard and crisp. Add the garlic + ginger + curry leaves + tamarind and stir fry for a min .Add the coconut and mix well . Remove and allow to cool
METHOD
Take the roasted ingredients and grind it to a fine pwdr.
Now add water and grind again.
Add water and grind to a thick paste. [the chutney absorbs more water , so add accordingly ]
Remove in a bowl and serve.
Goes well with plain rice or kanji or curd rice or SouthIndian brkfast like dosa ,idli.
NOTES
Clean the dal well as it contains lot of small red stones.
In our natives after roasting we grind it lightly on a stone grinder to remove the outer covering. We discard the outer covering and then use it .
We can use the grounded pwdr ,pressure cook it and the make dal curry from it.
We can also sprout it – Horse gram sprouts
You can also make a dry chutney pwdr by using the above recipe just omit coconut and water.
