INDORI GARADU KI CHAAT / KAND CHAAT RECIPE/ HOW TO MAKE YAM FRITTERS/ इंदौरी गराडू चाट

Garadu is an underground tuber which is used for making garadu chaat which is a popular and special street food/chaat of Indore.

Garadu ki Chat is a deep fried chat made from yam . The chaat is a typical winter street food from Indore .

We have a special spice Garadu Masala which is used in making this chaat which enhances the taste . The masala is similar to  chaat masala .If using this masala then there is no need add any other masala . This masala is easily available online. It is also called jiravan masala or jiralu powder.

If you don’t have garadu , try the same recipe with other variety of yam .

INGREDIENTS

  • 500 gms garadu
  • 2 tbsp or as per taste  garadu masala
  • Salt to taste
  • Lemon juice as needed
  • Oil for deep frying

METHOD

Try to avoid touching the raw yam with bare hands.

Trim off the ends of garadu taking off the narrow tapering ends and use only the middle section. Grease a knife and  peel the garadu .
Cut garadu into thick  roundels .
pressure cook upto 2 whistles.

Remove and drain into a colander.
Let cool.
Cut into bite sized cubes.

Heat oil in a deep pan .

Once the oil is hot slide in the garadu chunks.
Deep fry till golden and crisp.
Sprinkle jiralu / jeeravan masala [ garadu masala pwdr ]  , salt, lemon juice .
Mix well.
Garnish with coriander leaves.

RECIPE FOR GARADU CHAAT MASALA POWDER

INGREDIENTS

  • 2 tsp – roasted jeera  powder
  • 1 ½  tsp –  ginger powder
  • ½  tsp  – red chilli powder
  • ¼  tsp –  asafoetida
  • ½ tsp –  sendha namak
  • ½ tsp –  kala namak

METHOD

Take all ingredients in a mixing bowl and mix well. Mix till all ingredients blend together .

Store in an airtight bottle.

Sprinkle as much as needed on garadu and other chaats and mix well before serving.
