OATS UPMA

INGREDIENTS

  • Oats – 1 cup [ quick cooking oats ]
  • Finely chopped onion – 1 small
  • Mixed veges finely chopped – ½  cup [ boiled green peas ,carrot  ]
  • Finely chopped green chilli – 1 or as per taste
  • Water – ¾ cup [ extra 2 tbsp if required ]
  • Oil + ghee – ½ tbsp or 1 tbsp
  • Mustard seeds + urad dal – 1 tsp
  • Curry leaves – few
  • Grated ginger – ¼ tsp
  • Finely chopped coriander leaves and freshly grated coconut for garnish
  • Salt to taste
  • Sugar – ¼ tsp [ optional ]

METHOD

Heat oil + ghee in a pan, add mustard seeds + urad dal and let it crackle.

Add onions + chilli + ginger + curry leaves and fry till translucent.

Add veges + salt + ¼ tsp sugar  and stir fry till cooked for 2 mins .[ crunchy texture ,don’t over cook ]

Add the oats and mix well.

Stir fry for 1 minute till the oats get fried .[ colour should not change ]

Sprinkle ¾ cup of water little by little  and mix well .

***Don’t add water in one shot or it it will become sticky .

Cover and cook for 2 mins [ stir in-between ]

If you feel it is not cooked , you can sprinkle 1 or 2 tbsp of more water.

Once done off the flame . [ oats should become soft ]

Garnish with coconut and coriander leaves .

Serve hot  with coconut chutney or plain  .

NOTES

  1. You can also take a mixture of rava and oats.
  2. You can also add a pinch of turmeric pwdr to add colour.
  3. Y not add cashews.
  4. You can also roast the oats before .
  5. Use hot water to speed up cooking.
  6. Coconut is optional.
  7. Y not drizzle few drops of lemon juice while serving.
