HOW TO USE THESE FLOWERS –
These flowers are very delicate, and when one goes to buy these from the market, you will get very few bloomed flowers, most of them are buds. Along with these you shall find broken thin stems. These stems have to be discarded. Soak for sometime , wash and squeeze off the excess water . Flowers are ready to use .
INGREDIENTS
Drumstick flowers – 1 cup or more
Oil – 1 tbsp
Jeera – ½ tsp
Finely chopped onions – 1 big
Green chilli chopped – 2 or as per taste
Few curry leaves
Eggs – 3
Finely chopped coriander leaves for garnish
METHOD
Clean the flowers .Soak for sometime , wash and squeeze off the excess water . Flowers are ready to use .
Heat oil in a pan .
Add jeera and let it crackle .
Add onion + green chilli + curry leaves and stir fry till translucent .
Add the flowers and mix well.
Cover and cook for 3 – 4 mins .
Stir in between .
Open the pan and give anice mix.
Add the eggs and mix well.
Stir and cook till the eggs are done and soft .
Off the flame and garnish with coriander leaves .
Serve with any Indian breads.
